Non-traditional Thanksgiving

We are in the Thanksgiving stretch. I’m looking forward to the holidays because work will probably slow way down which hopefully means time to catch up those household projects that should have been done a long time ago like cleaning and organizing….well….everything. And decorating for Christmas. Tomorrow I’ll be shopping for Thanksgiving dinner supplies. On the downside? No work means no money.

This year I’ve really polled the family to see what everyone likes and doesn’t like. Turns out no one really likes stuffing! What is Thanksgiving without stuffing? So I’m going to use this as an opportunity to make some vegetarian cornbread stuffing – just a little bit – for Noah so he has a few options. Traditionally there is pretty much nothing for him to eat on Thanksgiving. I can’t imagine not eating on Thanksgiving! So I’ve tried to stay cognizant of his needs this year, too. I’ve had to go a bit non-traditional but I think we’ll have enough to feed him, this year.

I think the most non-traditional thing we’ll be making is this Mango Pie recipe. It just sounded good! We’ll have pumpkin pie too but I just couldn’t help but use this holiday as an excuse to make two pies :)

    My friend has to cook my dinner this year BUT I hosted a girls Bunko game and did a Thanksgiving meal and had a couple friends who were vegeterian and made this http://www.marthastewart.com/recipe/cauliflower-gratin-with-endive it ended up being a huge hit with everyone!

    We are vegetarian!! I have been for many years, Hans for 3 and we are raising Little Man as such. My mum always made sure there were plenty of options. Yummy sides like roasted veggies and tofu, nutty squash, stuffing, mashed potatoes with garlic. This year we are celebrating here in Holland so getting together with some other Americans. I’m bringing a pecan pie, ginger pears and roasted garlic mashed potatoes..now I’m starving.

    I eat vegetarian on Thanksgiving and have for years and years…I can send you some of the recipes we use (or that we’re planning on using) if you want. I’m really picky so I don’t know if Noah’s and my pickiness will overlap :) but you can always give it a shot!

    I have always loved the nonmeat aspects of Thanksgiving. Even as a kid, I only took a small bit of turkey, heaping my plate with mashed rutabaga, creamed cauliflower, stuffing, mashed potatoes and cranberry sauce with a fresh roll on the side. Yum! my SIL made a fabulous carrot souffle. i think I can dig up the recipe for you but probably not in time for this year’s dinner.
